Anzac Day: Honouring Service, Sacrifice, and Tradition
Anzac Day, observed on 25th April each year, is a time for Australians and New Zealanders to remember and honour the courage, sacrifice, and resilience of those who have served in the military. It marks the anniversary of the Gallipoli landings in 1915, where the Anzacs (Australian and New Zealand Army Corps) fought bravely in World War I. Over time, the day has come to commemorate all service members who have defended their countries in conflicts around the world.
A Personal Connection
For our family, Anzac Day holds deep significance. Molly’s dad dedicated over 20 years of his life to serving in the army, embodying the spirit of duty and sacrifice that Anzac Day represents. His service has instilled in us a deep respect for those who wear the uniform and a commitment to keeping their stories alive. Every year, we take time to reflect on his contributions, attend dawn services, and pay tribute to the men and women who have served.
Honouring Tradition Through Food
One of the enduring traditions associated with Anzac Day is the iconic Anzac biscuit. Originally made by soldiers' families during World War I, these biscuits were designed to be long-lasting and nutritious, made from simple ingredients like oats, golden syrup, and coconut. Today, they remain a symbol of remembrance, often baked and shared in honour of the Anzac spirit.
Since Molly is a passionate chef, she loves to honour this tradition through baking. This year, she has taken the classic Anzac biscuit and transformed it into a delicious slab version, incorporating sweetened condensed milk for a richer, chewier texture.
Condensed Milk Anzac Biscuit Slab Recipe
Ingredients:
1 ½ cups rolled oats
1 cup plain flour
¾ cup brown sugar
¾ cup desiccated coconut
125g butter
¼ cup golden syrup
½ can (200g) sweetened condensed milk
½ tsp bicarbonate of soda
2 tbsp boiling water
Instructions:

Preheat the oven to 175°C (350°F). Line a baking pan with baking paper.

In a large bowl, combine oats, flour, brown sugar, and coconut.

In a saucepan, melt butter, golden syrup, and condensed milk over low heat.

Dissolve bicarbonate of soda in boiling water, then stir into the butter mixture.

Pour wet ingredients into dry ingredients and mix well.

Press the mixture evenly into the prepared baking pan.

Bake for 20–25 minutes, until golden brown.

Allow to cool before slicing into slabs. Enjoy!
